Raspberry Balsamic Vinaigrette

Ingredients:

  • 1 1/2 cups organic raspberries

  • 1 tbs organic balsamic vinegar

  • 1 tsp dijon mustard

  • 3 tbs olive oil

  • salt to taste

Directions:

  1. Rinse raspberries in a mesh sieve.

  2. Dump berries in a bowl and add organic balsamic vinegar.

  3. Cover bowl with plastic wrap and let soak for 30 minutes to an hour (vinegar helps to break down the raspberries).

  4. Using a fork smash the raspberries until pulverized (you should have a bowl that looks like raspberry juice with lots of seeds).

  5. Pour mixture into a mason jar (if you don't like the seeds you can strain them out).

  6. Add dijon mustard, olive oil, and salt to the mason jars with the berries.

  7. Cover and shake, shake, shake!

  8. Store refrigerated for up to a week.
