This vegetarian taco definitely has a unique twist to it! I love radishes and one day I decided to make a radish salad and happened to add it on top of a corn tortilla, and there you have it! Radishes have a bitter almost spicy taste to the them but the sweetness of the tomatoes and creaminess of the goat cheese help to balance this out. I love the crunchiness of the radishes and the cucumbers as well. My lemon tahini dressing ties all these beautiful flavors together!

Turkey usually isn't my favorite protein source, I tend to lean more towards chicken or pork, but lately I've been enjoying ground turkey.
