White Bean and Roasted Garlic Hummus

The roasted garlic adds so much flavor to this classic hummus. I love the substitution of white beans for chick peas but you can be traditional if you'd like. This hummus is great with hard boiled eggs and toast for breakfast, to snack on with raw veggie, or as an addition to a salad or a dipping sauce for grilled chicken!
Radish Cucumber and Tomato Tacos

This vegetarian taco definitely has a unique twist to it! I love radishes and one day I decided to make a radish salad and happened to add it on top of a corn tortilla, and there you have it! Radishes have a bitter almost spicy taste to the them but the sweetness of the tomatoes and creaminess of the goat cheese help to balance this out. I love the crunchiness of the radishes and the cucumbers as well. My lemon tahini dressing ties all these beautiful flavors together!
Turkey Meatballs

I normally have turkey once a year. Can you guess when?! If you're thinking Thanksgiving than you're right! Turkey usually isn't my favorite protein source, I tend to lean more towards chicken or pork, but lately I've been enjoying ground turkey. These meatballs are juicy with lots of flavor, plus they have an added bonus...spinach!
Buffalo Chicken Thighs

This recipe is quick, easy, and delicious. You can replace the hot sauce with any sauce you like (BBQ sauce, even an herbed butter and lemon sauce). This is one of my go-to meals for the week. I share with you the veggie combo I like to use to make a buffalo chicken thigh bowl, but you can use whatever veggies you like, use the chicken as a main dish with other sides, or add to a salad!

For all you non-dairy eaters out there this reminds me so much of full-fat Greek yogurt minus the probiotics! Easy to make over-night and have stored in the fridge for a quick yet healthy grab-n-go breakfast! Coconuts have lots of healthy fats so this pudding is great fuel to get your day going!

Gluten free oats, a mashed sweet potato with chili powder, topped with a turmeric poached egg. The yolk from the egg creates an amazing sauce!

I promise you won't even notice the difference and if you love veggies as much as I do you may actually secretly enjoy this better than rice!
