Ingredients:

  • 1/2 cup gluten free quick oats

  • 1 cup of water

  • 1/2 sweet potato, roasted and mashed

  • 1 tsp ground cinnamon

  • 1tsp chili powder

  • 1 green onion, sliced on bias 

  • 1 turmeric poached egg

  • (Follow recipe in link for perfect poached eggs, add 1 tsp of turmeric to your poaching liquid)

 

Directions:

  1. Bowl 1 cup of water. Add quick oats and reduce to a simmer. Cook covered until all the liquid has absorbed about 5 minutes.

  2. Remove skin from sweet potato and once the oatmeal is cooked immediately mash the potato into the oats.

  3. Mix in cinnamon and chili powder.

  4. Top with turmeric poached egg and green onions.
