Lemon Cilantro Tahini Dressing
Tahini is a paste or sauce that is used in many Middle Eastern cuisines, most commonly known for it's use in hummus and baba ghanoush. It is made from sesame seeds that are pureed until they form a paste. It kind of reminds me of making homemade nut butters. Unlike nut butters however it has a little more of a bitter taste. The addition of fresh squeezed lemon juice and chopped cilantro really brightens up this simple yet tasty dressing.

Ingredients:
1/2 cup of Tahini
Juice and zest of 1 large lemon
4-6 tbs of water
2 tbs chopped cilantro
Salt and Pepper to taste
Directions:
Add tahini to mixing bowl.
Zest and juice lemon into tahini.
Add water and mix with a whisk (start with 4 tbs and then increase to 6 depends on how thick you want your dressing, I added the full 6).
Mix in chopped cilantro and salt and pepper.
Taste and adjust seasonings to your desired preference.
