Shout Out to a Favorite Blogger

Happy Saturday Morning. It's beautiful here in my hometown and this morning I'm sipping on a strong cup of coffee, snacking on one of these delicious cookies I made earlier in the week, and sitting on my front porch with my sister and doggie as I write up this quick post. Tuesdays have been my day off for the past couple of weeks so that's when I love developing new recipes or trying out recipes from some of my favorite bloggers! One of my favorite bloggers is McKel Hill of Nutrition Stripped (ever seen me in that Avocado shirt I love so much?! Well that's her shirt and design!). I first saw her on Instagram a few years back and ever since have been following her and her blog. One of the reasons I love this blogger so much is because she is an RD with a Masters of Science in clinical nutrition. She is a credible source and I trust what she publishes. I also like how we share many similar health and lifestyle values: eating real food, balance, wellness, and self-love and appreciation. Her philosophy states, "The more we know about our bodies, our food, and our well-being, the sooner we can recognize that we have a powerful ability to impact the way we feel every day and the better we can care for ourselves. Everything we share about nutrition is backed by science but served up in ways that are stripped down, making it relevant and easy to incorporate in your life".-McKel Hill.

I just recently checked out her new cookbook Nutrition Stripped: 100 Whole Food Recipes Made Deliciously Simple, and I've already tried out a few recipes that have been super tasty. I'm really excited to experiment with the other recipes and share with you all how they turn out, which obviously will be amazing just like her. Today I'm enjoying these amazing Puffed Rice Caramel Cookies. Many reasons I love this recipe: A.) I basically already had all the ingredients as most of them are staples in my kitchen, B.) They are no bake - yay!, C.) The caramel that she created with dates is genius! I plan on using it for many other recipes, D.) They are delicious and perfect for a dessert, snack, or even breakfast cookie!
