Refreshing Watermelon Juice/Smoothie
It’s summer which means watermelon season! Watermelons are one of my favorite fruits to snack on, so refreshing. But what do you do with all of that extra cut up watermelon that’s on the verge of going bad or being thrown out? Easy make this simple and delicious juice/smoothie! I’ve been dealing with some stomach/gastro-intestinal issues (GI) lately, and let’s be honest it can be easy to fall off of the healthy eating path especially during the summer season. Watermelons are about 92% water, however this powerful fruit is packed with nutrients such as vitamins A, B6, C, amino acids, potassium, antioxidants, and tons of lycopene! Lycopene is a phytonutrient found naturally in produce that has been linked to heart, bone, and prostate cancer prevention. Studies have shown that this powerful antioxidant also has anti-inflammatory properties, hence why it would be great for my GI tract! Lycopene is what gives your fruit that bright red color, found in your tomatoes and watermelon. The redder your fruit the stronger the lycopene properties. Lycopene is an inhibitor for various inflammatory processes and also works as an antioxidant to neutralize free radicals. This refreshing fruit contains choline, which helps minimize inflammation. The fiber in watermelon also aids in a healthy digestive tract and can help keep your bowels regular! If you are experiencing any form of inflammation or digestive issues I encourage you to eat watermelon or try other foods that contain lycopene!
Ingredients:
1/2 cup cucumber, diced
1/2 cup frozen strawberries ( 6-8 whole strawberries, fresh)
2 cups watermelon, cubed
Juice and zest of 1 lime
1/2 cup water (or any juices from the watermelon)
(If not using frozen strawberries, add ice)
Directions:
Put all ingredients in the blender, blend, and enjoy!
