Pumpkin Everything

It's fall ya'll which means pumpkin, pumpkin everything. Pumpkin spiced lattes, pumpkin butter, pumpkin pancakes and waffles, pumpkins pies, cookies, and cakes! Let's not forget about carving those pumpkins and making a tasty and savory snack out of pumpkin seeds. Pumpkin is usually associated with sweets but what about switching it up?! Another one of my favorite meals to make in the fall is chili. Chili is perfect for those cold days, so easy to make, and such a great comfort food that always hits the spot for me. I decided to take two of my favorite things, pumpkin and chili, and created a Chicken Pumpkin Chili that I am absolutely in love with and will be sharing the recipe with you all. I won't lie at first I wasn't too sure if I would like the combination of chicken and pumpkin but the pumpkin pairs so well with the warming spices!

Before I share this tastiness with you, this wouldn't be an Elle post without sharing some facts and nutrition education on pumpkin! A pumpkin comes from the squash family and is referred to as a fruit because it comes from a flowering plant and contains seeds. Pumpkins are in season during the fall through winter. This wonderful fruit is loaded with beta-carotene, which is the pre-cursor for vitamin A. Beta-Carotene is responsible for the pumpkin's beautiful bright, orange color. Vitamin A is a fat soluble vitamin necessary for vision, healthy skin, and brain function. One cup of cooked pumpkin contains 49 calories, 3 grams of fiber, 20% of your daily Vitamin C needs and 245% of the daily recommended value for Vitamin A . Pumpkin also contains many other important vitamins and minerals including phosphorus, calcium and potassium.
