Turkey Meatballs
Makes 12 Meatballs, Serves 3-4
Ingredients:

1lb organic ground turkey

1/2 c gluten free oats

1 c spinach, roughly chopped

2 green onions, sliced on bias

1 clove garlic, minced

1 tsp parsley, chopped

1 tsp oregano
-
1/2 tsp white pepper
-
1/4 tsp sea salt

2 tbs grape seed oil

Directions:

Preheat the oven to 350 degrees.

Combine all ingredients in a bowl minus the grape seed oil.

Roll meat mixture into about 1 1/2 inch balls.

Heat a cast iron skillet with grape seed oil on medium-high heat.

Add meatballs and brown on each side, about 2 minutes.

Transfer skillet to the oven and bake for 15 minutes uncovered and then an additional 5-7 min covered.
*I served mine with zoodles, (zuchinni noddles) spiralized sweet potatoes, and spring peas sautéed in Fourth and Heart ghee, with some arugula tossed in.
