Turkey Meatballs

Makes 12 Meatballs, Serves 3-4

Ingredients:

  • 1lb organic ground turkey

  • 1/2 c gluten free oats

  • 1 c spinach, roughly chopped

  • 2 green onions, sliced on bias

  • 1 clove garlic, minced

  • 1 tsp parsley, chopped

  • 1 tsp oregano

  • 1/2 tsp white pepper

  • 1/4 tsp sea salt

  • 2 tbs grape seed oil

Directions:

  1. Preheat the oven to 350 degrees.

  2. Combine all ingredients in a bowl minus the grape seed oil.

  3. Roll meat mixture into about 1 1/2 inch balls.

  4. Heat a cast iron skillet with grape seed oil on medium-high heat.

  5. Add meatballs and brown on each side, about 2 minutes.

  6. Transfer skillet to the oven and bake for 15 minutes uncovered and then an additional 5-7 min covered.

 

*I served mine with zoodles, (zuchinni noddles) spiralized sweet potatoes, and spring peas sautéed in Fourth and Heart ghee, with some arugula tossed in.
